At the origin there was the quiche :
The quiche lorraine for foreigners, and for us from Lorraine, simply la quiche as that’s our only and unique quiche. Don’t trust to the copycats and frauds. It has a crust, cream, egg and bacon. The only common point with a quichan is the egg.
I have read about “quiche sans pate” (without a crust), quiche sans gras (fat free), quiche sans lard (no bacon)… Is it still a quiche ? Surely not. That can be good too, but if it’s sans, it’s a quichan.
It’s a quichan avec. Yes, it’s “with” something as I can’t serve an empty dish.
So egg + silky tofu, salt, pepper, garnished avec shiitake mushrooms, onion, garlic and parsley. Mix and bake.
Serve very hot and eat immediately.
