Take soba buckwheat noodles, boiled and cooled.
Instant ketchup : tomato passata (unflavored), a good amount of balsamico vinegar, a little soy sauce. Ice cubes to refresh.
I don’t really like bottled ketchup, too sweet, the taste… so I eat only my version. In Summer, have lots of cooked tomato. It’s one of the best source of lycopene, that protects the skin under the sun.
Toppings are green negi leeks, green (medium hot) chili peppers, fried tofu, fava beans, sesame seeds.
Very easy to eat on a super-hot day. And that’s a rich meal :

I was just trying to explain to someone that what is commonly eaten as ketchup (Heinz) has distorted our expectation of what ketchup should taste like. This is what it should taste like.
