I have new silicone molds… in shape of clovers with 4 leaves.
The cakes are “quatre-quarts” or 4/4. The equal weight of the 4 ingredients, flour, sugar, butter, egg. Start weighting the egg… Add a little baking powder to the flour. The less the butter is melt, the better the taste. Lemon zest is a discret addition, that was green yuzu. I replaced a part of the sugar by wheat bran.
Cakes are better cooled, even better after a few days…
