Choupe, soupe, chou..



Everybody likes the soupe aux choux (cabbage soup). Well, I don’t. I mean I’m not a fan of the traditional version as I think the cabbage is overcooked and the smell is unpleasant, then you fart and some Martians fall on your nose…

So I started simmering lots of good stuff, garlic, red onion, dried shiitake mushrooms, tomato dices, (frozen) white beans, hot chili and a little beef fat for the flavor.

When the time of the meal was close, I added the fresh cabbage, salt, pepper and reheated.

The test for a garbure type peasant soup : “It is good if the spoon can stand in it by itself”.
