Mary, who writes the delicious blog, Mary Mary Culinary was our August Daring Cooks’ host. Mary chose to show us how delicious South Indian cuisine is! She challenged us to make Appam and another South Indian/Sri Lankan dish to go with the warm flat bread.

They get this particular texture.

They can be lacy like these, but it seems the traditional shape is a cup, with lace around and a relatively thick pancake in the bottom. Tried that in a wok :

I made the second batch with brown rice. The batter ferments quicker, or more if you let the same time.

They are really delicious and easy to make.
