A lazy hot day meal…
Double green “risotto”. It’s not a risotto, it’s thawing frozen brown rice porridge (left over), and adding juice broccoli stalk to it. While it heats up, pasting dry garlic, basil, olive oil, salt. Pour that pesto on the rice.
Toppings : mini-tomatoes, 2 quenelles of Hokkaido cream cheese (not so fat) with freshly ground coriander seed, capers.
That was refreshing. Eaten on the balcony.
