A fish and whole wheat pizza this time.

Ququii

The dough is cooked in a skillet. Then I’ve added tomato paste + olive oil + garlic + salt. I garnished with green peppers, sweet corn, onion, capers, anchovy and :

I’ve added this leftover of seared bonito fish. I’ve finished the cooking in the skillet.

Caramelized onion polentart

DSC08334-001
DSC08303-001

A golden version of the pissaladiere, the onion and anchovy tart from Provence.

I add a second polenta tart crust left from when I baked this tarte polenta.
I’ve painted it with olive oil, baked it.

Garnished with onions cooked till brown in the olive oil from a can of anchovies with a little garlic. Garnished the crust. Added red chili and a few anchovy filets. Re-baked briefly. Decorated with green olives and thyme. You can make it without anchovies if you add a little soy sauce to the onions.

Cut when it’s cooled. I eat it at room temperature, and in this season that means warm.

Le zoo de panisses et tapenade verte

I’m playing with animal cookie cutters and Provence’s classics.

Same recipe as these bunny panisses you’ve seen a few weeks ago.

Green olive tapenade.

Served with sticks of cucumbers and toothpicks. You have a nice Summer appetizer or light meal.

Pichade lazy

DSC06750-001

Tonight, a good pichade. Lazy because I was too lazy to walk to the shop and get yeast for the dough. And I used a machine…

DSC06631-001

Tchak, tchak…lots of onions.

DSC06674-001

In the home-bakery (the jam program).

DSC06688-001

On dough with 1/2 whole wheat flour, it is made with baking powder.

DSC06748-001

Baked. It’s different with yeast, but this version is nice too.

Beanballs in anchovy rosemary sauce

Comfort food : balls in sauce. Healthier version : bean balls. Yes, the famous pattzukis again in an Italian sauce.
That’s ready in 5 minutes if you have cooked beans.

I had just boiled 500 grams of azuki small red beans (that makes 10 servings at least, I will freeze that stock. I took a cup, mashed with a fork, added salt, pepper, garlic, chili, sesame, potato starch and bits of green pepper.

A fragrant tomato paste sauce with olive oil anchovy, rosemary and a few corn kernels for the fun.

Finger licking good…
