Aka endo mame tortilla, and veggie plate

DSC03428-001DSC03407-001

A nice plant-based brunch to enjoy season local produce.

DSC08911-002

Do you remember these aka endo mame red peas ? I soaked them and made this batter :

DSC03391-001

Adding hijiki seaweed, grated turmeric, chili pepper and soy sauce.

DSC03394-001

Cooked like a pancake. It’s possible to flip it, but it breaks when you fold it.

DSC03412-001

That’s it. On top, drizzles of balsamico sauce.

DSC03402-001

The red carrots of Kyoto.

DSC03425-001

Just grated them. They have a sweeter and fruitier taste than average carrots.

DSC03406-001

Leafy daikon radish.

DSC03424-001

Just steamed.

DSC03423-001

Big daikon. I cut, salted, let 30 minutes and rinsed.

DSC03422-001

Yuzu dressing : yuzu citrus juice, grated peel, salt and sesame oil.

DSC03419-001

Crunchy, yummy, filling…

Black natto brunch

DSC03182-001DSC03178-001

Tororo on my bowl of natto

DSC03167-001

A nagaimo, a long yamaimo or Japanese yam. Naga means long. We often buy only a cut, but the root is 60 cm long or more.

DSC03168-001

Grated. Tororo tuto.

DSC03181-001

Like an apple or an avocado, grated yamaimo tends to oxidate and darken in color. Or not, and that’s not previsible. But that was the case with this one so I’ve added juice of sudachi lime to keep it relatively creamy in color. That’s also a nice flavor addition.

DSC03174-001

Black natto (fermented soy beans). It’s often paired with grated wasabi.

DSC03172-001

Natto with rice is a regular breakfast item in Japan. So just that with tororo and green tea. A nice simple brunch.

Genmai okayu, brown rice brunch soup

DSC03080-001DSC03069-001

Okayu, rice porridge. An many pickles. It’s simple, colorful, feeling and very tasty.
I had a cold, not much appetite. That was perfect.

2013-11-13

Umeboshi, salty plum, with the red shiso that comes together.

2013-11-132

Aka kabu, red Kyoto turnip tsukemono.

DSC03044-001

Cornichons à l’estragon, with the onion from the same jar. Behind, a few capers.

2013-11-131

Toasted abrura-age (fried tofu) and 2 sesames.

DSC03043-001

All the topping are ready.

DSC03059-001

And the rice. Just good brown rice, longly simmered in water.

Generous apple brioche

DSC02122-001
DSC02129-001

A delicious brioche sweet bread, ideal fruity treat for the season.

It’s garnished with one of these superb akibae apples.

DSC02127-001

To get a delicious fluffy dough, the main ingredient is time.
One day, you mix yeast, sugar, water and flour to make a sponge. The next day, you make a dough. Two days later you bake it. The net day you enjoy the delight.
300 g bread flour
1/2 cup of yeast “sponge”.
40 g sugar
80 g butter
1 egg + 1 white
about a cup of milk

DSC02104-001

It’s filled with cubes of apple, many. Also, cocoa chips, Grand-Marnier soaked raisins, cinnamon.

DSC02110-001

On top, sliced almonds, sugar, cinnamon.

DSC02118-001

Really, be patient, as it gets so much better a whole day after baking.
