So quick, so fresh… A very green salsa dip with refreshing okra.

Sweet green chili pepper. I took out the seeds, juiced a hand full. Add another hand full cut into the blender. Plus a little minced garlic, cut onion. A little hot green pepper. A little salt.

Added cut steamed okra. Blended into a chunky texture. Let a while in the fridge to chill and let flavors mix.
With bought nacho chips.

A quickie ! Fresh green and healthy, a Summer hummous based on broad beans (favas).

Pound or blend together : boiled broad beans (fresh or frozen), a bunch of mitsuba leaves with stalks, a little bit of garlic, salt. Add a little olive oil. Let chill. Serve with a drizzle of olive oil and chili flakes.

Nuts, herbs and spices, that’s dukka

I had never heard about this product. Originally from Egypt, dukka (duqqa) is a kind of spice mix used in Middle-Eastern cuisines. The quickest way to taste it was to make mine. That’s without warranty of having the authentic flavor but that doesn’t matter as long as it’s good. Some day I’ll go there to taste the original.

Spices : black pepper, coriander seeds, raw sea salt, dry mint.
“Nuts” : sesame seeds, walnut, cashew nut.
I roasted them in 2 batches. I’ve added cumin powder and paprika powder. And in a mortar, ground finely the spices and more coarsely the nuts.

Boiled chick peas were waiting to become hummus. I’ve added garlic, a little yuzu juice, olive oil on top.

I eat it as a dip for veggie sticks (red bell pepper and cucumbers).

Nachos, veg’ melt dip and some coconut.

Let’s have a few hot nachos as appetizers…

… and a big meal, very fusion, totally vegan, centered on this coco-nutty veggies.

The nachos… I’ve toasted a tortilla and cut. Roughly. It’s wheat, no oil, so are they still nachos ? Anyway they were very crispy and tasty.

The melt dip is silky tofu, salt, (alimentary) beer yeast, turmeric, paprika, blended, reheated. With chili powder.

The main dish. Romaine salad in coconut milk stir-fry. With azuki red beans, broad beans, daikon radish, onion garlic. Spiced with salt, cumin, chili and black pepper. Mmm…

Home-made wheat wrap.

Left-over of wax squash and carrot in soy sauce.

Dessert : cabello de ángel (click here) with a marasquino.

Edadip, quick healthy platter

For a light dinner in front of TV (you still have one ?) or surprise visitors… It’s ready in 3 minutes.

That’s edamame green soy beans (blanched, refreshed, taken out of pods). They are sold that way frozen too.

Made into hummus : blended with garlic, salt, oil.

With sticks of daikon radish and carrots. They are fresh, crunchy, watery.

Save a few beans to munch like that.
