Sesame jewels. The Chinatown treat home-made.


Let’s continue with the Chinese festivities for Lunar New Year, click here for many ideas).
Now, 芝麻球 , zhimaqiu, pearls with sesame. Hot, golden, crispy, and the inside sweet and melting. Everybody buys them it seems. But they are really quick and simple to make. Also you will know what they are made of.

The inside is boiled azuki beans mixed with sugar (here kurozato black sugar), mashed with a fork.
The dough is made of mochiko, and you can also use shiratamako, both are processed glutinous rice flour. You really need this ingredient, or an equivalent, and not ordinary rice floor. (read here about these rice flours)
Add enough lukewarm water to obtain a sort of playdo.

Then shape the balls and roll them in sesame seeds.

Then fry about 5~8 minutes in oil at about 160 degrees Celsius.

Freshly made. They have to be served hot.
They are not as perfectly round as those you buy, but you’d solve that as doing like they do at the stalls : taking them out of the freezer into the oil. They hold their shape… I don’t think that’s necessary.

So you have a crispy thin crust around, soft white dough and creamy filling.

Let’s make those crispy and spicy triangle parcels with a season flavor.

It’s a combination of potato and kabocha pumpkin purees. The flavor comes from fried spices (mustard, cardamom, ajowan…), onion, and kabocha rind. All that is mixed.

Triangle ? I don’t have the technique to fold them, and I didn’t want to stop in the middle to research that. Next time…

Squares are easier.

Fried ! Yes, that’s a bit greasy. I have grated cabbage with them to help digesting that.

Chicken flower cups, 3 styles


The idea was to make some kind of baked shaomai dumplings. A good idea. That’s very simple and delicious.

I’ve used the square wonton dumpling skins. They are all half-filled with lean ground chicken. There are 3 sorts :

Red onion, tomato sauce.

Topping is red shiso leaves.

Shishito pepper, tomato sauce.

And parsley.

Onion, nutmeg, parsley stalks, raisins. The sauce is miso mixed with tahini.

The 3 are great. I prefer…er, I need to compare 3 more… well, I need more…
That’s hard to decide, but I like simplicity so the onion ones will win.

Dinner chuka

Chuka is an old word for Chinese. A short for chuka-ryori (Chinese cuisine in Japan). Well localised Chinese cuisine. Pass it at the sauce gourmande and add season produce, you have this simple dinner.

You can see a few colored leaves, but the trees are still very green, only a few fell. The cold air has been around for 2 in evenings only. So the dramatic color change of Autumn should start this week-end.

Stir-fry. Flavored with oyster sauce, tomato paste and ginger. It contains chicken liver, red onions, dried carrots, chili pepper, chrysanthemum leaves (added after).

Satoimo mochi. (see recipe here) It is served coated with Thai sweet chili sauce.

Gyoza dumplings (bought ready to stir-fry). I eat them dipped in Chinese black vinegar.

Yes, I cheat, I buy ready sometimes. Why not ? But making gyoza is possible. The thing is you need days of 25 hours to make the gyoza + the 2 other dishes. I’ll “gyoze” another day.
