Sakura musubi

DSC03573-001DSC03575-001

Musubi mean making a knot. They are also packages of rice, to take with you as lunch pack. The plastic film gives the shape to the ball.

DSC03496-001

A mix of genmai (brown rice), mochigome (sticky rice), kurogome (black rice, sticky too) and takakibi (sorghum).

DSC03567-001

Pickled sakura leaves, rinsed.

DSC03572-001

Wrap. Keep a few hours, or better the next day. The leaves are not very tasty but give a sakura flavors and saltiness to the rice.

Sashimi lunch

DSC03481-001

A classic Japanese meal around a dish of sashimi. I prepared the sides.

DSC03463-001

Steamed kabocha pumpkin and ninniku no me garlic stalks. With soy sauce.

**I simply place the veggies in a steaming basket on top of a boiling water pot, or in the steaming mode of the microwave. Thin kabocha slices take 8 to 10 minutes. Garlic stalks only need 3 o 4 minutes to be at my taste. I add sesame seeds and soy sauce when I serve them.

DSC03465-001

The sashimi : ika (calamari), buri (yellow tail) and ama ebi (nordic shrimps).

DSC03471-001

An umeboshi (salted plum).

DSC03472-001

Tofu with oboro kombu (seaweed), seasoned with the soy sauce left after the sashimi dipping.

**How to choose or make tofu.

DSC03478-002

The miso soup with hijiki seaweed, shimeji mushrooms and kintoki red carrots.

Sesame and sesame ramen

DSC03235-001
DSC03238-001

A warm ramen lunch to fight the chilly weather.Nothing goes better with pork broth than the nuttiness of toasted sesame.

DSC03225-001

I bought the noddles and the soup (tonkotsu pork broth).

2013-11-25

The reheat noddles and toppings. Sliced ginger and kujo negi leeks. Toasted sesame and kiku chrysanthemum. And on top of that, a little mix of miso, toasted sesame and garlic, pasted together.

A very filling side dish : veggies in gochujang Korean sauce. There are okra, kuromame black soy beans, ninniku no me garlic stalks…

Okomeyaki, brown rice okonomiyaki

DSC03200-001

Mid-way between yaki-onigiri and okonomiyaki, a tasty and healthy lunch. That’s really interesting to enjoy together the crusty flavor of grilled rice and the cabbage soft feel of okonomiyaki.

2013-11-18

A triple base : cooked brown rice (leftovers), dry mushrooms and cabbage.

2013-11-181

For the batter : 1/3 cup of cooked rice, 1/2 rice flour, the soaking water of mushrooms, salt. In the blender 1 minute.
For the filling : cabbage, ninnniku no me (garlic stalks), minced fresh ginger, 2/3 cup of cooked rice.
Mix, cook one side in an oiled pan.
