Ultra-fresh Spring eggs are a delicacy. They are perfect to make poached eggs. This is a light first dish, ideal to start a big Easter feast.

Rum vanilla apple black beans, in fragrant tortilla

Yeah, another easy vegan lunch.

Spicy tortillas.

The beans are simmered with togarashi (fresh Japanese chili) and some rum vanilla marinated apples. Yes, these apples for the pie :

I had really so many. I added olive oil, onion, garlic and salt. Forgot a long time on the stove. That’s yummy !

Add some greens and pickles. And wrap-lunch…

Nachos, veg’ melt dip and some coconut.

Let’s have a few hot nachos as appetizers…

… and a big meal, very fusion, totally vegan, centered on this coco-nutty veggies.

The nachos… I’ve toasted a tortilla and cut. Roughly. It’s wheat, no oil, so are they still nachos ? Anyway they were very crispy and tasty.

The melt dip is silky tofu, salt, (alimentary) beer yeast, turmeric, paprika, blended, reheated. With chili powder.

The main dish. Romaine salad in coconut milk stir-fry. With azuki red beans, broad beans, daikon radish, onion garlic. Spiced with salt, cumin, chili and black pepper. Mmm…

Home-made wheat wrap.

Left-over of wax squash and carrot in soy sauce.

Dessert : cabello de ángel (click here) with a marasquino.

Double corn brunch waffle

Not much effort to prepare this complete meal.
Menu : savory waffles, natto-kimchi, drink salad and coffee jelly.

The particularity is these waffles have a corn bread flavor due to cornmeal batter, and some corn kernels inside…

And also some greens…

That’s a standard (eyeballed into the blender) waffle batter, except it’s half-flour and half-grits (coarse corn meal). Flavored with rosemary, garlic and chili. In the waffle maker, I added : frozen corn kernels, fava beans and raw green bell pepper.

Crusty and golden. Bring kimchi and natto.

A romaine salad getting too soft…into the blender with 1/2 grapefruit, a ts of grass wheat powder. Cinnamon on top. It had a refreshing bitterness.

Prepared the coffee agar jelly the day before. That takes one minute.

Served with veg cream and a little kurozato black sugar.
