Spaghetti Alvegho, healthy Alf’


I don’t know this Alfredo that drowns pasta in cream, and that’s not even something I find appealing. But I love a creamy textured sauce.

Like this. But there is no cream, and no pasta here. And that’s deliciously addictive.

Steamed spagh’ squash. It’s really tasty in this season. I could eat a huge one everyday.

That’s the recipe. Mix all that and simmer a while. Ea-sy !

Add few bits of “chives”. It’s Japanese chives, very close to the French ones but less strong.

Poetic inspiration came for today’s brunch.

Spaghetti squash.

Petals of rose on sunny rice.

Petals of beetroot.
That’s very simple. The rice is cooked hatsuga genmai (germinated brown rice) colored and spiced with turmeric, oil, black pepper and fennel seeds. On top, all the parts, last leaves, petals and all of a few mini-roses.

Ground azuki beans, with miso, garlic, lots pounded of white sesame. Reheated with steamed spaghetti squash.

Powered up spaghetti squash. Topped with negi leeks.

Beet slices are grilled in the oven toaster.

With grated ginger. These 2 go well together. Grilling really changes the beetroot. The inside is still very juicy. It’s very crunchy, there is matter to chew.

That’s the whole meal. A table !

Spaghetti squash is a convenient veggie. A pack of pasta, sold in 2 bowls to serve it.

Stir-fried. No cheese and no tomato paste… I’ve used sake kasu and gochujang plus paprika powder.

Spaghetti squash meets couscous

A good pair ! I will do it again. This time, the items are briefly poached in the couscous spicy broth, in order to enjoy the most of their freshness.
