A simple refreshing plant-based lunch. It’s really crunchy and nutty. That’s popular in kombini (convenience stores) these days, but home-made is so much better.

First make some wraps with wheat flour, olive oil and water (recipe here).

After making, I’ve spritzed water on my tortillas and rolled them with cooking paper. The goal is to keep them flexible and easy to roll without breaking. They can be kept a few days in the fridge.

Grated cabbage.

A few other veggies. For the sauce tofunaise + freshly ground toasted sesame + a few chili flakes.

It seems the Cinco de Mayo, 5/5 on the calendar is the day when the Mexicans eat Mexican food. So I want some too.

DSC01637-001

So here is the menu : burritos colorados (in red sauce), 3 baked veggies. That’s how I imagine Mexican food.

2013-05-05

I made these burritos from scratches. Home-made tortillas, strips of chicken grilled after being marinated in lemon juice, powdered jalapeno, salt and parsley, dices of avocado, parsley, onion…

Covered with a spicy tomato sauce. With soy yogurt, cabbage, avocado dices.

Nagai togarashi, they are local green sweet peppers.
I’ve filled them with sakekasu (sake lees) mixed with minced onion, paprika, turmeric, salt, a little olive oil and lots of cumin.

栗黄金 kurikogane (chestnut yellow gold potato) is the princess of sweet potatoes. It is cultivated in Kagoshima, Kyushu. It’s very sweet and flavorful. They make high quality shochu liquor with it.

After being baked. I’ve also baked classic potatoes.

These ingredients give the mood…

I have followed the recipe of bean chili with dark chocolate and walnut, using sprouted azuki I had cooked and frozen. So it’s quick to mix and let simmer.

Sides : A home-made wheat tortilla, toasted. And stir-fried white parts of romaine salad.

Purple Sauerkraut in monk’s robe

A colorful wrap lunch.

A wheat tortilla colored with turmeric (curcuma). The South Asian monk’s robes too are traditionally dyed with this spice. I always loved the color of this powder. Now, it is thought to be very healthy.

DIY quick tortillas

The veggie mix or how to empty your fridge : sauerkraut, onion, leek, tomato paste, azuki beans and some snow peas.

Ready !

Mmmm….
